Biography
Laura Kruskall joined UNLV Nutrition Sciences during fall 1999 and teaches human nutrition, introductory and advanced sports nutrition, medical nutrition therapy, and seminar in nutrition within the Nutrition Sciences programs.
Kruskall’s primary role is educational administration for the accredited Nutrition Sciences programs. Her research time is limited, but focuses on the relationship between vitamin D and bone health in active individuals and athletes, and the effectiveness of educational community nutrition programs.
Kruskall earned her undergraduate degree in biology from Mount Saint Mary College, master’s degree in human nutrition from Columbia University, and doctoral degree in nutrition from Penn State University.
Kruskall is a fellow of the American College of Sports Medicine, and the Academy of Nutrition and Dietetics, and received these distinctions due to her leadership in the organizations and her impact within the nutrition and dietetics profession. She is a past president of the Nevada Dietetic Association and is still active at the local and state levels. She founded the UNLV Nutrition Center, which has a mission to serve the UNLV and Las Vegas community by promoting health and wellness, and demonstrating how sound nutrition can help prevent and manage chronic diseases.
During 2007-2009 and 2013-2014, Kruskall served as co-chair for the Standards of Practice and Standards of Professional Performance for the Sports, Cardiovascular and Wellness Nutrition Dietetic Practice Group of the Academy of Nutrition and Dietetics.
