WHAT: Culinary and hospitality students at the Harrah Hotel College will hone their skills in event planning, restaurant management, food preparation and dining room service and learn from a top chef at the Chef Artist Series dining event.
Students and Geno Bernardo, chef of Nove Italiano at Palms Casino & Resort, will prepare hors d'oeuvres and a four-course meal for the sixth installment of the dinner series. Proceeds from the event benefit a scholarship fund for students and faculty in the food and beverage department.
WHEN: Tuesday, March 16, 2010 from 6 p.m. to 9 p.m.
WHERE: Stan Fulton Building at UNLV, off of Flamingo Road and Swenson Avenue.
DETAILS: The menu: appetizers of vitello tonnato freddo (cold veal in tuna sauce), first course of anolini di Parma in Brodo (meat stuffed dumplings); second course of pan-seared turbot with Maine lobster sauce Americana; third course of tournedos alla Rossini (beef steak with foie gras). Side dishes include polenta al sugo funghi porcini (polenta dumplings with wild mushroom sauce) and wild mushrooms with thyme, garlic and chilies. For dessert, guests will build their own cannoli.
